The Ingredients You'll Need:
1 Tbsp of Coconut Yoghurt
1/2 of a mango
1 Tbsp Honey (preferably Manuka)
A splash of Lemon Juice
A little sprinkling of lemon rind
1/2 tsp Raw Cacao Powder
2 tsp of Goji berries
- First cut the mango, using the half slice into 6 slices taking the 2 outside slices and dicing them finely.
- Then bring a pan to a medium heat, adding the honey, taking off the heat when it starts to over bubble, then re apply to heat and repeat about 4 times before bringing it to a low heat.
- While that is simmering put the coconut yoghurt, lemon juice and lemon rind into a bowl and mix together.
- To serve, place the yoghurt mixture in a spoonful in one position, then place the mango on top in a fan like position. Then top with the mango honey syrup, with a little sprinkling of Raw Cacao Powder to finish.
