Free Nutritious Recipes #3 - Mango with Lemon Coconut Yoghurt


The Ingredients You'll Need:

  • 1 Tbsp of Coconut Yoghurt 

  • 1/2 of a mango 

  • 1 Tbsp Honey (preferably Manuka)

  • A splash of Lemon Juice

  • A little sprinkling of lemon rind 

  • 1/2 tsp Raw Cacao Powder 

  • 2 tsp of Goji berries

    Cooking Instructions

    1. First cut the mango, using the half slice into 6 slices taking the 2 outside slices and dicing them finely.



    2. Then bring a pan to a medium heat, adding the honey, taking off the heat when it starts to over bubble, then re apply to heat and repeat about 4 times before bringing it to a low heat.

    3. While that is simmering put the coconut yoghurt, lemon juice and lemon rind into a bowl and mix together.



    4. To serve, place the yoghurt mixture in a spoonful in one position, then place the mango on top in a fan like position. Then top with the mango honey syrup, with a little sprinkling of Raw Cacao Powder to finish.
