Free Nutritious Recipes #2 - Chickpea and Mushroom Bruschetta

The Ingredients You'll Need:

  • 4 Cherry Tomatoes
  • 2 Chestnut Mushrooms 
  • 2 Garlic Cloves
  • Handful of Rocket
  • Handful of Kale 
  • 1/2 Red Onion
  • 1/2 Tin of Chickpeas 
  • tbsp of Tamari
  • Salt - pepper
  • Bee Pollen
  • 1-2 Slices of Rye Bread
  • 1/2 tsp of Paprika 
  • Flaxseed

Cooking Instructions

  1. Bring a frying pan to a medium heat, with a little coconut oil. Slice the red onion, and finely chop the garlic. Add the onion to pan with half the tamari and little salt. 

  2. After about 6-7 minutes the onions should be sweated, with a little colour. Then add the chickpeas and garlic to pan, frying off for a few more minutes before adding the rest of the tamari and paprika, then leave on a low heat while you prepare the rest of the ingredients. 

  3. Pop the slices of bread in the toaster then slice the tomatoes into thin slices, likewise with the kale and rocket. Rub half a garlic clove on the toast with a drizzle of olive oil. Then place the toast on the bottom, followed by the mushroom, chickpea mix. Topping that with the salad, tomatoes, bee pollen and a little flaxseed. 
  4. Enjoy!
